Is it worth playing Kingdom Hearts 1?
If you like the series, you should definitely play through Kingdom Hearts I. It's actually holding up pretty well, especially the 1.5 HD ReMIX version.
Do you need to play Kingdom Hearts 1 and 2 to play Kingdom Hearts 3?
You technically don't need to "play" the previous games in the series. But you should at least watch the cutscenes for each previous game on youtube. Unless you just want an emotional connection to characters and what you can get a grasp of in the story then no.

Kingdom Hearts is the hardest game from a true difficulty standpoint. There is only one point in the entire game where it actively tricks you, and that's one of the secret bosses, who has two invisible health bars.

Yes. Because 1.5 and 2.5 ARE the in between titles. It's every kingdom hearts game. The only one you're missing is 2.8 which has dream drop distance, and then you're all set.
